Merriman’s Kapalua is the dinner people plan a Maui trip around: a dining room and lawn on a lava point above Kapalua Bay, run by Peter Merriman, one of the chefs who launched Hawai’i Regional Cuisine in the early 1990s. It is about 50 minutes from the bungalows, it is the most special-occasion meal on the island this side of Mama’s, and tables open 60 days out with sunset slots going first. Plan accordingly.

Why Merriman's Kapalua is worth the drive

Peter Merriman helped found the Hawai’i Regional Cuisine movement, the early-90s push by a dozen chefs to get island restaurants cooking with island ingredients instead of flown-in freight. Three decades later that philosophy runs the kitchen here: local line-caught fish, Maui Cattle Company beef, and produce from upcountry farms named on the menu.

Then there is the setting. The restaurant owns the tip of the lava point between Kapalua Bay and Namalu Bay, so the dining room and lawn look straight down the channel at Moloka’i and Lana’i. At sunset the whole room quietly rotates its chairs west; the staff has the timing of golden hour down to the minute.

It is a splurge, priced like the milestone dinner it usually is, and it earns the tab in a way resort dining rooms rarely do. If your trip has one anniversary, proposal or big-birthday meal in it, this is where we send people, with Mama’s Fish House as the north-shore alternative.

Reservations, the Point Lounge, and how to time it

Book the moment your dates are firm. Reservations open 60 days in advance and dinner runs from 4 pm, with the last seatings around 8:30; the sunset window in the main dining room is the first thing to vanish, especially in winter and around holidays. Check the exact sunset time for your date and aim an hour before it.

No reservation? The oceanfront Point Lounge seats on a first-come basis from mid-afternoon, weather permitting, with cocktails and a lighter menu. Showing up around opening for a lounge table with the full view is one of the great cheap-thrill upgrades on Maui, and the happy hour early in the afternoon sweetens it further.

Make a full day of West Maui out of it: walk the Kapalua Coastal Trail between the bays, snorkel Napili Bay next door in the morning, and roll into dinner salt-rinsed and hungry. The drive home in the dark is easy; the highway is well marked the whole way.

What to know about Kapalua restaurants and the area

Kapalua is the polished corner of West Maui, a resort area laced with golf courses, condos and a shoreline that alternates lava points with swimmable coves. Among Kapalua restaurants, Merriman’s is the special-occasion anchor, with the resort’s other rooms covering the casual nights. It is quieter than Kaanapali, and dinner reservations are the area’s main traffic.

If you fall for the farm-to-table style but want it at burger-and-a-beer prices, Merriman himself runs the more casual Monkeypod Kitchen, including a Wailea location ten minutes from the bungalows. Same sourcing ethos, famous mai tai, considerably easier on the wallet.

Respect the occasion but skip the suit: resort aloha wear is the norm, and you will see everything from sundresses to nice shorts. Winter visitors get a bonus show, since humpbacks work the channel December through March and the point is a natural whale-watching perch while you wait for your table.
